It's hard to believe, but Thanksgiving is right around the corner! Spice up your usual cornbread recipe with this delicious Cheesy Cornbread from our Chef de Cuisine, Matt Nelson.

Ingredients:
- 1/4 cup of butter
- 1 onion, diced
- 2 large eggs
- 2 cups of sour cream
- 1 can, whole kernel corn, drained
- 1 can, cream-style corn
- Salt & pepper, about 1/4 teaspoon of each
- 1 package of corn bread mix OR 8 1/2 oz. of cornmeal
- 2 jalapenos, minced
- 2 cups of shredded cheddar cheese

Directions: Preheat your oven to 375 degrees. In a saute pan, add onions and butter - cook until onions are tender, then set aside. In a bowl, add beaten eggs, sour cream, both cans of corn and salt and pepper. Mix well. Stir in corn bread mix or corn meal until well blended. Add minced jalapenos, sauteed onions and shredded cheese. Mix well. Transfer mixture to a shallow-3 quart baking dish, spread out evenly, sprinkle extra cheese on top (if desired) and baked, uncovered for 35-40 minutes. Garnish with chives and sliced jalapenos, if desired. Enjoy!
